I'm sorry I've been lacking in the blogging department. The kids ended up with a snow day last Thursday due to inclement weather (poor visibility and FA-REEZING windchills). So the end of the week was a bit wonky.
We did deviate from our menu last week, but it all worked out in the end.
This week I'm trying HARD to stay on track, can't wait for tomorrow's dinner. What would make it even better though would be if we had asparagus to go with it. Oh well, need to wait a few more months until it's in season. We've also decided as a family that the older 3 will get to cook one meal a week. Generally Friday, Saturday and Sunday, however this week, since there isn't school on Wednesday Ashlynn will get to cook on Tuesday.
Monday - Steak Inspired Slow Cooked Beef, Twice Baked Potato Casserole, Tossed Salad with homemade dressing. This is one of our favorite comfort meals!
Tuesday - Pannu Kakku (again, but hey, the kids LOVE it)
Wednesday - Turkey dinner with all the fixins (just because I can)
Thursday - Leftovers
Friday - Tex Mex Chicken Salad (Logan is making this)
Saturday - Pizza and Salad (Brooklyn is cooking)
Sunday - Grilled Cheese burgers, french fries, cole slaw, baked beans and chocolate caramel creme pie (new recipe) - This is Ashlynn's birthday dinner, she'll be 9.
I've also decided to really track our finances to see where they are all going. I've created a weekly grocery budget and a rough budget for taxables for the month. I'm sure it'll take a couple of months before I get a good tracking of where it goes.
