This was a busy week. The kids were off from school on Friday because of a teacher in-service. So we ALL went for my OB appointment. It did work out though because we had to get the older girls winter coats. It's been windy and rainy and COLD - they are even predicting rain/snow mix for Thursday, I'm hoping not. I'm really praying that the snow holds off for a few more weeks at least. Or if it does fall, it melts right away.
Anywho ...
Wednesday we made the Southwest Chicken Chili Mac and everyone liked it BUT Ashlynn. Not surprising as she is my pickiest eater. Ryan and I both agreed that it was missing something though. I did omit the garlic (still can't stand the smell and taste of it) and the ranch (same deal as the garlic). We did add some cheese to the top and served it with herb bread. Logan and Brooklyn have requested that I make it again.
Thursday we had the Tomato, Bacon and Cheese Quesadillas. These were a HUGE hit! It was like having a BLT without having to go through the hassle of toasting the bread as well as sans mayo. Ryan did add lettuce to his, but "forgot" to add to mine. Even without lettuce on them, DELISH! This recipe will be a regular in our house. Even Ashlynn who hates bacon liked them!
I didn't get a craft done this week like I had intended. I get tired quickly and have very little (if any) energy lately. My goal is to do some this week (again, hoping I reach that goal). I need to get Christmas gifts started and completed sooner rather than later.
Check back tomorrow for my weekly menu. The grocery ad this week is highly uninspiring, so we're running with what we've got again (which isn't much in the freezer, but we're getting MUCH better at making it stretch!!).
